About the Recipe

I’m sold when a recipe is easy, fun to make, and gets a great reaction from my guests. And if it uses ingredients I usually have on hand, it’s a no-brainer! That’s exactly what this whipped feta and roasted olive board is all about. Simple, tasty, and sure to impress anyone you serve it to. It's the perfect snack for summer stoep kuiers, paired with a great bottle of wine and even better friends. Side Note: Add some pomegranates when in season!

Ingredients


  • 3-4 wheels of full-fat feta cheese

  • ¼ cup plain yogurt

  • 1 Tablespoon honey

  • 1 cup Kalamata olives

  • 1 cup Green olives

  • 3 Tablespoons extra virgin olive oil

  • 1 Tablespoon za’atar

  • 1 Tablespoon dried oregano

  • Pine nuts


You can replace the Za'atar and Oregano with Dukkah

Instructions

In the bowl of a food processor, add the feta, yogurt, and honey. Pulse until well combined and smooth.

In a separate bowl, add the olives, olive oil, za’atar, and oregano. Stir to combine and coat the olives.

Spread the feta mixture in an even layer on a clean serving board. Top with the olive mixture and pine nuts, if desired.

Serve immediately!
