About the Recipe
This is our go-to treat, and for good reason—it’s simple, delicious, and perfect for any occasion. As someone who’s not the best at making sweet treats, I love that it only requires a few ingredients that are easy to keep on hand in the cupboard. A true South African tart, this dessert adds a local twist with its rich caramel and minty flavors. I’ve made it everything from a hand-whisked version in a plastic ‘bakkie’ while camping under the stars to a more refined version enjoyed at a high tea with bubbles, and it never fails to impress. It’s creamy, indulgent, and a little bit minty—exactly the kind of treat that brings joy to any gathering.

Ingredients
1 can caramel
1 large (or 2 small) Peppermint Crisp chocolate bar - chopped
1 packet Tennis biscuits - crushed
1/2 cup butter - melted
1 cup cream - whipped
Instructions
In a mixing bowl, combine the melted butter and crushed Tennis biscuits until well mixed.
Press the mixture into the base of a baking dish to form a crust. Refrigerate for 15 minutes to set.
In another bowl, mix the caramel and cream until smooth and creamy.
Add 3/4 of the Peppermint Crisp into the mixture.
Pour the caramel mixture over the chilled biscuit crust, spreading it evenly.
Sprinkle the remaining chopped Peppermint Crisp over the top of the caramel layer.
Refrigerate for at least 2 hours to allow the dessert to set before serving.
