This chicken bobotie is one of the best recipes my mom ever shared with me. It's seriously a lifesaver, especially for those crazy days when cooking seems impossible. And the bonus? You can freeze it for those times when you just need dinner ASAP.
My mom's got this knack for making killer curries too. I mean, her curries are on another level, bursting with flavors that can turn any meal into an adventure. Ingredients
625 ml chicken — shredded
60 ml sultanas
2 onions — medium, chopped
250 ml mayonnaise
20 ml jam — smooth, apricot
10 ml lemon juice
1 packet cream of chicken soup
10 ml curry powder
250 ml milk
1/2t dried mixed herbs
2 eggs — whisked
sea salt and freshly ground black pepper
Instructions
Preheat the oven to 180 ºC (350 ºF) and spray a medium ovenproof dish with non-stick spray or grease well.
Gently mix the chicken, sultanas, and onion and spoon into the ovenproof dish. Beat the remaining ingredients together and season with salt and pepper.
Pour over the chicken and mix gently with a fork.
Bake in a preheated oven until set and golden brown (45-50 minutes).
Serve with rice, peas and a salad.
